Hand-made from raw goat milk from a specific race, which spend at least 210 days per year in the open

Fat content: 45 % fat, dry weight

Ivory colored, very soft interior with thin natural rind and mold spots

Taste: spicy & aromatic, slightly sour

Enclosed in chestnut leaves for ripening
