Traditional, pressed, half-firm sliced cheese with EU-wide Protected Designation of Origin (PDO), most well-known cheese in Venice

Hand made and industrially produced from raw or pasteurized cow milk and animal rennet

Light, straw-yellow interior with small to medium-sized holes and thin, smooth natural rind

Fat content: 45 % fat, dry weight

Taste: buttery, mildly aromatic

Ripening time: 2040 days
