Half-firm sliceable cheese with EU-wide Protected Designation of Origin (PDO)

Made from raw or pasteurized cow milk and animal rennet

Soft, ivory-colored, tender interior with thin, elastic, smooth, yellow rind

Fat content: at least 45 % fat, dry weight

Taste: tender, buttery, slightly sour

Ripening time: at least 6 days

One of the most well-known Galician cheeses. May only be produced from the milk of specific cows from this region
