Made from silo-free raw cow milk from Appenzell

Yellow interior with few, small holes, whose rind is repeatedly rubbed with a herbal stock during the ripening process

Fat content: 48 % fat, dry weight

Taste: very herbal, full, characteristic, becomes more intense with ripening

Ripening time: at least 3 months
